Tire advice? Hook with high low end TQ?

My e63 M6 should be done in about a month from Troy Jeup.

5.5l 13.2:1 CR gas/methanol. Race seats to drop about 100lbs in the middle of the car. Carbon fiber driveshaft drops some motor weight. BC coilovers.
I realize 19 inch wheels would be better but it’s not a full race car I still like luxury and I got a pair of Vorsteiner VFF-103’s 20x9.5 et22 up Front 20x10.5 et 34 in the rear in near mint condition for interview dollars so I’m going to go with those.
The problem is what rear tires to get. Torque power band is 3300-7600 so I’m going to have a lot of low-end torque and problems hooking. I’m adding long tube headers to drop a little down low torque and gain it up top.
My previous M6 was just bolt ons and the fenders were rolled and I used 285/35/20 ToyoR888’s and they hooked amazing. They look perfect with spacers but the old fitment was Forgestar F14’s 20x9 et.18 fronts and 20x10.5 et.25 rears.
This time I need to go to 305’s. I’d like 315’s but Troy said even with the fenders rolled 305’s is about as wide as I can go but I’m going to need a lower wall like a 25 or 30.
I assume I also have to go with a bigger wall up front like a 275/30 if I go with 25s in the rear or 275/35 upfront if I go with 30s in the rear but upfront isn’t a problem because I don’t need drag radials or R’s up there.
I live in Southern California it hardly ever rains. I dont track the car it’s more of a weekend car but I want to hook up on the street.
Really my only option with the 25 is the 305/25/20 Toyo Proxes Tr1 but I don’t know much about that tire and I’m not sure if it’s going to hurt.
There are more options with a 30 wall and I’m debating between the Hoosier R7 305/30/20 or Nitto Nt05 305/30/20 but it’s not the Nt05”r” it’s just Nt05.
So I guess what I’m asking is what will be the best option between those two or the Toyo Tr1 with the 25 wall? Or if you happen to know of a better tire?
