Had a GF who used to make pan fried chicken tenders. Soooo good. What oil do you think works best?

Honestly I'm not sure, I just use whatever olive oil I have but I've also heard peanut and canola oil is good to use. The trick that I do is I use no flour, because otherwise the coating doesn't properly stick to the chicken.

Wesson, 10w-30. The full synthetic leaves an aftertaste though, might try a blended.

Pizza Friday

Whole wheat crust from scratch, with pepperoni and usual seasonings. New twist this time is fresh basil, so good.

Dinner here was a Bojangles biscuit, side of their dirty rice, and an unsweetened iced tea (because this yankee's stomach cannot cope with southern-style sweet tea). I did also sample a few bites of their signature fried chicken, but was not really in the mood for chicken tonight.

First time that I ever tried Bojangles, and it is certainly on my list of places to dine if I'm near one in the future. That biscuit was the best that I've ever eaten, and their dirty rice side was almost a meal in itself.....

Tried my hand at smoking Chicken on a Gas Grill for the first time, turned out pretty good to me.

Don't mind the missing skin, the chef needed a quality control sample.
