I strongly recommend some extra meat of the fatty varietal, or even chorizo.

Taco Tuesday we went to the roach coach around the corner. quesobirra (birria and cheese inside, then grilled in the birria juice) and Hawaiian (al pastor, onions, pineapple, cheese). I so want to call the sheriff every time I see that thing parked on the side of the road, then I stop in and have another taco . . .
