First big BBQ of the season
Ribeye Souis Vide the steaks 1.5 hrs @ 123F then Seared Tuna - toasted sesame oil cayanne pepper white and black sesame seeds 1.5 min on each side to sear Bang bang shrimp- Costco frozen panco shrimp air fried and tossed in a mix of mayo , hot sauce , tiny bit agave and topped green onion. Thinking about picking this up this weekend. I have an electric smoker that is annoying to clean every time I want to smoke something. I figured this would be a good smoker / grill in one as opposed to having a separate grill and a separate smoker.
I am not sure if the 850 sq-in will be big enough. Will need to go into the snow and see. Anyone have a Pit Boss? Thoughts? Thanks!

That being said I'm not sure how electric smokers are to clean, but this thing is no fun to clean either. Honestly I'm not sure I've ever owned any BBQ or smoker that was easy to clean. The half and half model is a bit small for the smoker side. Like I'm not sure I could get a really large brisket in there, but we almost never smoke that much since it's just the two of us. I use to have a gas wood smoker and I would never go back to that. The pellet smokers are just soooooo much easier. Even if the wood give a bit better taste, not enough to justify the hassle for me. |

Oops, sorry about that. Thought I pasted the link. dreamingat30fps For the wife and I, it's more so condensing from 2 to 1. I know I will use it a lot more to be honest. I love smoking meat and we are always having people over. So to me..it's almost a no brainer.

My youngest daughter graduated from high school recently, and for the grad party, I decided to take up the challenge of smoking BBQ for 70+ people. (A couple years ago, my older daughter graduated high school, and for her party, we hired a BBQ catering service for a similar number of attendees. (I had not started my BBQ journey yet.) They charged almost $3k for the food......now that I'm comfortable smoking BBQ, I decided I wanted to give it a try for a big crowd.)
This, by far, would be the most people I have ever attempted to smoke meat for at one time. The main challenge was that my Traeger smoker can only hold 1 brisket at a time. And I didn't want to cook anything beforehand and fridge it. So, the logistical challenge was to figure out how to rotate meats on the smoker and have everything ready and fresh for a 4PM party. I went to Sam's Club and got two prime briskets and three pork shoulders for $150. Once trimmed, it was 50 lbs of meat. hehe way better than $3k....... I came up with a schedule that would start meats on the smoker, and then move them to ovens in the kitchen. Of course, the smoke started the evening before party. It took 21 hours to cook everything. But I was ready for the 4PM start! The food worked out great! The food was more than enough. People definitely attacked the brisket more than the pulled pork. Didn't have much brisket left--less than half a brisket. I vacuum sealed and froze the leftovers. Been snacking on them ever since. Pork ready to wrap: Briskets ready to wrap: I really enjoyed making the food for this large event. Would do it again. Gonna make some Dino ribs for the 4th.

Ended up buying the Pit Boss pillet smoker this past Saturday at Menards. Was the exact same model Lowes was selling and was able to get $150 off from what Lowe's was charging. This thing is straight up amazing. Smoked some big ribs that were seasoned with St. Louis style dry rub. Bought them from Costco on Sunday. Took 5 hours at 225 degrees. Last hour, wrapped the ribs in alum foil and increased the temp to 280 so I can get the internal temp of the ribs around 198-203. They were just falling off the bone..unreal! View post on imgur.com

At Lowes, they had it for $600. Price did not move at all since the wife and I have been looking at it. We just so happen to be in Menards because I built a front porch and the wife want's a black metal roof. So I told my wife, lets go check out the grills while we are inside and I shit you not...it was $450. I bought it right then and there. After my first smoke...I am very pleased so far. Will report back over the course of the year and let everyone know how it's all going. But it's been one hell of a great purchase! Couldn't be happier! I think next is a pork shoulder then two-three, 3lb boneless turkey breasts..which are my favorite since you can make several different dishes with the turkey meat.
