Depending on how long you are staying, their capital and it's surrounding islands Male and Hulu-Male will take about 2 days to see the entire islands max. And to get to the other Atolls would take forever on a boat and really pricey with sea-planes. So assuming you are staying on a resort island, just go for the whole package.
And they do have street racing there on one of the back roads in Hulu-Male on Fridays during the afternoon.
