ceramic controls are so sleek. it would actually be a huge deciding factor if i was considering a 5, 6, or 7

Ceramic Controls
Never really took off, unless you're in a hot country where I presume this helps
In 12 years of woning and running various BMWs, and being sent cars by BMW UK on extended test drives, never once have i been sent one with ceramic controls (including the 7-series, 8-series, M5, X5 and the i8) Retrofit kits also not really available AR

They are one of those little things that may at first go unnoticed if you weren't aware that there was an option for regular or ceramic. But when you get an opportunity to see & feel the ceramic dials...then see & feel the regular (plastic) ones...you kind of get the "ahh...I see now" point of view.
The original owners may have thought nothing about NOT checking off the box when ordering them new...being that the option was like $650 for them. But again, once you've seen & used them...you may be swayed to drop the $650 for them. On the used market (where we are today)...it was definitely on my must have list. In fact, the ceramic dials were higher up the list than the sport pkg (but that's probably rare). Below are some google search screen grabs of the pre-LCI regular (plastic) dials...and the last pic is a facelift (LCI) M model with ceramic dials:
