Most of the handling improvements are from the lower center of gravity, which is primarily from seats that are lower to the ground. Since the seats are lower, your legs stick out more forward, so the seats (front) had to move back for enough room. Simple enough.

The Grand Touring comments are spot on though, this is a car designed for a max of 2 people 95% of the time.
