Correct. Warranty is no longer voided by using launch control. You can use it 4 consecutive times then have to wait a few minutes before you can do it again. 0-60 in 2.8 is possible on a bone stock 2012/13 car. I clocked 3.0 when my 2012 was stock (530hp), 2.9 when I had 600hp, 2.8 when I had 670hp, and a best of 2.7 with my current 700hp. I don't use launch control much these days because it's a bit too much abuse at these hp levels. I have used it in the 1/4 and was able to do 10.1 at 137mph.

There is no denying the stock M5/6 engines are strong, and probably a little under rated. Should easily be able to get it up to 700hp with a few bold ons.
